Some people place a piece of broken pottery in the pot in order to hasten the softening of meat. Is this scientific? Why?

  2. No, it doesn't have any effect on the meat.
  3. This is an amazingly dangerous idea. Crockery with faulty glazing has caused health concerns before now. This was reported at the time in a science magazine (Scientific American or New Scientist). To use broken crokery is to expose the inside which could easily have poisonous substances. You could more or less expect some of the inside to dissolve in water. Meat can be softened in various safe ways e.g. sprinkle with papain (enzyme) got from pineapples.
